Using Fishbein's multiattribute model as a theoretical background, this paper develops an empirical model to assess and identify attributes of agrobiotechnology and individual characteristics determining public acceptance of biotech foods. Using Heckman's sample selection model, consumer willingness-to-pay (accept) premium (discount) for non-GM (GM) cereals was analyzed. Results showed that consumers who were indifferent to the risk of consuming GM foods behaved differently compared to those who were willing-to-pay (accept) premium (discount) for non-GM (GM) cereals.

Antecedents Factors that Influence Soy Consumption: A Structural Equation Modeling Approach AgEcon

We propose a structural model of antecedent factors that affect the frequency of soy consumption. This model, suggests that soy-general knowledge influences perceptions about nutrition concern, health benefits of soy, soy related personal beliefs and personal attitudes toward soy. Health benefits of soy, in turn, impacts soy-related personal beliefs and personal attitudes toward soy. Additionally, soy-related personal beliefs influence personal attitudes toward soy. Finally, both nutrition concern and personal attitudes toward soy drive the frequency of soy consumption. APPLICATION OF BIOTECHNOLOGY IN AGRICULTURE AND MEDICINE: UNITED STATES VERSUS EUROPE AgEcon

Discrepancies in the attitude between US and UK consumers toward application of biotechnology in crop production and medicine were examined using data from mail and online surveys. Results showed that more than 31% (46%) of US (UK) respondents were opposed to biotech foods while only 16% (18%) opposed biotech medicine, respectively. Perceived risks and benefits of agro-biotechnology and medical biotechnology were significant in determining overall attitude toward application of biotechnology in agriculture and medicine i.e., perceived risks (benefits) caused consumers to oppose (support) application of biotechnology in food production and medicine.

Assessing Public Preferences and Holistic Economic Value of Multifunctional Agriculture in the U.S. AgEcon

This study used the contingent valuation method to shed light on public preferences on the multifunctional roles of the U.S. agriculture and to present a holistic estimate of the economic value of the nonmarket goods and services of the U.S. agriculture. Fishbein’s model of reasoned behavior and mediation hypothesis were combined to model the relationship between WTP (behavioral intentions) and sets of explanatory variables including attitudes, perceived attributes (about family farms, farmland preservation programs, government involvement in agricultural markets, and ecological state of our world), and socio-demographic profiles. Two-stage regression models were used to estimate the effects of the perceived attributes of soy food and socio-economic variables on participation decision and consumption frequency decision for soy products. While households consuming soy products increased from 2001 to 2007 by nearly two percentage points, the frequency of consumption declined considerably.

Conceptualizing Multifunctional Agriculture from a Global Perspective AgEcon

The notion of multifunctional agriculture has been actively researched from diverse disciplines including economics, ecology, sociology, and geography since emerged out of the Uruguay Round in the 1990s. In particular, the economics approach represents an attempt to tailor the concept of multifunctional agriculture to market-oriented WTO trade regime. Consumer Willingness-to-Pay for Fresh Pork Attributes AgEcon

A survey was used to gauge consumer preferences toward four fresh pork attributes: juiciness, tenderness, marbling, and leanness. The survey elicited consumer willingness-to-pay a premium for an improvement in these attributes. Approximately one-half of the respondents were willing to pay some premium for the attributes of juiciness, leanness, and tenderness. The average premium size ranged from $0.20/lb. for marbling to $0.37/lb. for tenderness. Neither the choice of a certifying agency nor the use of a cheap talk script influenced premium levels.

CUSTOMER PROFILES OF RETAIL FOOD OUTLETS IN THE EMERGING MARKET ECONOMY OF BULGARIA AgEcon

The objective of this study was to identify profiles of consumers frequenting three types of food retail outlets- grocery stores, farmer markets, and street stalls- to purchase food in a transition economy in Bulgaria. This study estimated two-stage decision models to distinguish between the two decisions of choosing to shop at a particular outlet and how often to shop. Retail-outlet selection and shopping frequency were affected by different sets of sociodemographic characteristics. In particular, household income was a major factor influencing the selection of farmer markets and street stands, but had no effect on the selection of and shopping frequency at grocery stores.

Using generalized Heckman's model and NPD data, this study specified a meat demand model incorporating health concern and demographics. Estimated model established empirical linkages between health concerns and meat consumption. Estimating the Effect of FDA Allowed Health Claims on the Consumption of Soy-based Foods AgEcon

The study evaluated the influence of the Food and Drug Administration (FDA)'s regulatory action regarding the health benefits of soy-based foods on soy consumption. The results indicated that frequent users of soyfood products who were exposed to the FDA’'s decision would be more inclined to increase their consumption of soy-based foods as compared to those who were not exposed to such information. Labeling Genetically Modified Food Products: Attitudes among the consumers in the United States and United Kingdom AgEcon

Eight perceived attributes of agro-biotechnology were identified to be associated with consumers' attitude toward existing practices of GM food labeling. The perceived negative attributes, particularly health risk from GM food, played a dominant role in shaping the overall attitude toward GM labeling. Female and older respondents were more likely to be concerned about the existing GM labeling practices than male and younger respondents. Consumers with college education were less likely to be concerned about existing GM labeling practices than those without college degree.

Using nationwide food consumption survey data collected in Bulgaria in 1997, this study examines how food intake patterns of the unemployed and pensioners differ from patterns of the employed. During transition, the unemployed and pensioners are particularly vulnerable to nutritional deficiencies and chronic diseases resulting from unbalanced and unhealthy diets as well as food shortage.

Perceived Health Benefits and Soy Consumption Behavior: Two-Stage Decision Model Approach AgEcon

A two-stage decision model is developed to assess the effect of perceived soy health benefits on consumers' decisions with respect to soy food. The first stage captures whether or not to consume soy food, while the second stage reflects how often to consume. A conceptual/analytical framework is also employed, combining Lancaster's characteristics model and Fishbein's multi-attribute model. Results show that perceived soy health benefits significantly influence both decision stages. Further, consumers' negative perceptions regarding soy (unappetizing taste and inconvenience) have a substantially greater impact on soy consumption behavior than their perceptions about soy health benefits. Perceived Risks of Agro-biotechnology and Organic Food Purchase in the United States AgEcon

This study examined the role of consumers' perceived risks and benefits of agro-biotechnology in shaping the purchase pattern for organic food among US consumers. Consumers' general purchase behavior, knowledge of GM technology, and socio-demographic variables were examined in relation to their impact on organic food purchase. The sample data indicated that less than one fourth of the consumers bought organic products at least sometimes. Only 2% of the consumers bought organic food very often.
